3 1/2 tea cups Vegetable Oil
1 cup Granulated Sugar
1/2 tea cup Brandy
1/2 tea cup Orange Juice
from 1 orange Orange Zest
1 tsp Baking Soda
2 tsp Ammonia
1 Tbsp Cinnamon
1 Tbsp Carnation
1 tea cup Semolina thin semolina
8 tea cups All purpose flour
200 gr Walnuts cut in small pieces or through a food processor
For the syrup
4 tea cups Granulated Sugar
4 tea cups Water
2 tea cups Honey best quality

This is the best recipe for making homemade melomakarona

Melomakarona are Greek honey cookies and one of the most famous Greek Christmas dessert besides Kourabiedes!

  • For the syrup




First you have to make the syrup.Take a small pot and add all the ingredients.Let it come to a simmer and cook them all together for five minutes.During this time take a spoon and remove the foam from the surface that honey creates.Let it aside.


Take a large bowl and add the vegetable oil, the brandy, the sugar, the cinnamon, the carnation and the orange zest and whisk them all together.


In a small glass or bowl add the orange juice and with a spoon dissolve the ammonia into the juice.Do it over the the bowl with your mixture because it gets really foamy so that the foam drops into the rest of the ingredients.


Add the semolina, the baking soda, and the flour and neat the dough with your hands.It is a really soft dough.


Preheat your oven at 175 C and place your dough on a clean counter.Press it with your hands or a dough roller(I prefer with my hands)to have an even dough in thickness about 1.5 cm.Create the shape you prefer or use a cookie cutter and place the cookies on a baking dish.Bake them for 25 minutes.


When the cookies are baked, get them off the oven and immediately dip them into the syrup.Let them sit for 2-3 minutes.Take them out and place them to a platter.When the first layer is done sprinkle them on top with walnuts.Continue doing that with all your cookies.
