Ingredients

1 cup Dairy butter it is melted goat and sheep butter(must be at room temperature)
1 1/2 cup Granulated Sugar
1 cup Milk full fat
4 Eggs
1 small lemon Lemon Zest
1 tsp Vanilla extract or 1 vanilla powder stick
3 cups Cake Flour
for topping Icing sugar

The most moist and tasty cake you'll ever taste! Whoever finds the coin will have good luck throughout the year!

This is an amazing recipe for New Year's Eve cake! My mother in law gave me this recipe and since then I make it every year!It is an absolute hit! I hope you like it as much as we do!

Preheat your oven at 170 C.Spray with non stick cooking spray a round baking dish(30cm wide).

Separate the egg whites from the yolks.Beat the egg whites into a meringue.

Take a bowl , add the butter and the sugar and using your hand mixer or a whisk mix them very well.

Add the egg yolks, the vanilla and the lemon zest.

Now add the milk and the flour alternately.

Then fold in the meringue into the mixture.Pour it into the baking dish and taking a coin wash it vey well, cover it with aluminium foil and dip it into the pan.Bake it for about an hour or insert a toothpick and if it comes out clean then you know it's ready.Dust it with icing sugar or you can write the year with melted chocolate!
