Ingredients

For the batter:
1 cup Cake Flour
1 cup Granulated Sugar
125 gr Butter melted
2/3 cup Milk at room temperature
1 Egg at room temperature
For the filling
3-4 Fresh Peaches peeled and cut into small pieces(you can use peach compote but you have to reduce the sugar in half
1 cup Granulated Sugar
1 tsp Lemon Juice
1/2 tsp Cinnamon

Having fresh peaches in my kitchen is a good excuse to make peach cobbler! A very simple, easy and quick recipe to use peaches and have a perfect dessert!

In the baking dish add the butter cut in pieces and put it into warm oven to melt(about 100 degrees Celsius).

While the butter is melting, take a small sauce pan and add the peaches, the sugar, the lemon juice and the cinnamon and let it cook for a few minutes(don't overcook it because peaches will be very soft).

While peaches are cooling down it's time to make the batter.In a bowl add the egg, the sugar and whisk it together until smooth. Add the flour and the milk and continue whisking until all the ingredients are incorporated.

Pour the batter into the baking dish with the melted butter and on top place the cooked peaches.Try to cover the whole surface.

Put it into the oven at 180 degrees Celsius for about 45 minutes.
Serve it with vanilla ice cream.
