Ingredients

1 cup Heavy cream
1 cup Milk or you can use 2 cups half and half
2 Egg yolks
110 gr Cream Cheese at room temerature
2/3 cup Granulated Sugar
2/3 cup Strawberry puree which is fresh strawberries pulp(500 gr with 50 gr granulated sugar
6 biscuits Petit Beur you can use instead digestive biscuits or any other square biscuit
1 1/2 tsp Vanilla extract

Strawberry cheesecake in an ice cream edition!

You know how much I love cheesecake so I made a summer edition of it!

Take a bowl and place the cream cheese and the sugar and whisk it together.

Add the egg yolks and keep whisking.

Take a sauce pan and pour the cream and milk and over medium low heat wait until you see bubbles around the edges.When you see these bubbles remove it from the stove.

Meanwhile take another sauce pan and add some water in it and bring to a boil.

Pour it into the cream cheese mixture slowly and keep whisking quickly so that the eggs will not cook from the milk's temperature.

Place the ball on top of the boiling water so that the raw egg yolks are cooked(make sure the bowl doesn't touch the water) while continuously stir the custard. You will know it's ready because it is going to get thicker. Dip in a wooden spoon.With your finger draw a line and if the two sides are not meeting together you know it is ready.

Pour the custard in a bowl and add the vanilla extract and the strawberry puree.Allow it to cool down.Place a cling film on the surface will prevent it from creating a crust.Put it into the fridge overnight.

Now using an ice cream machine pour the custard in and turn your machine on.Mine takes 30 minutes. At 25 minutes add the crumbled biscuits and let it work for another 5 minutes.
You can serve it right away or place it into the freezer for a couple of hours to be extra firm.
