Ingredients

8-10 Zucchini medium size
300gr Ground Beef
1 Onion large and chopped
2Tbsp Parsley fresh
2Tbsp Dill fresh
4Tbsp Olive Oil
1Tbsp Soup Rice
1 1/2cup Water
to taste Salt,Pepper
1 cup Warm Broth
1 Egg if you want you can use 2 whole eggs or 2 egg yolks
1-2 lemons Lemon Juice

This is a recipe that my mom always use to make during winter time and we all love it in our family! For this recipe I also made avgolemono which is a mixture of eggs, lemon and warm broth.

Using a kitchen tool or a spoon remove the inside of the zucchinis.

In a bowl add the ground beef,onion,parsley and dill, the rice, salt and pepper and mix until all the ingredients are well combined.

Take a small amount of this mixture and fill in the zucchinis . If you have leftovers from the mixture make small meatballs and add them too(we don't throw it away).

In a pot add the olive oil,place stuffed zucchinis, add the water and cook them about an hour or so, in a pressure cooker it needs only 15-20 minutes.

When they're ready,it is time to make avgolemono! Take of the pot some broth and let it cool until it's warm and not super hot. Add the lemon juice and the egg, and using a blender or a whisk mix them very well. Pour avgolemon on top of zucchinis ,swirl the pot just to cover the whole pot and serve it warm.
