Ingredients

1 as big as you prefer Turkey
1/2 cup Butter
1tsp Oregano dried
1tsp Rosemary dried
2-3 large Potatoes cut in big pieces
to taste Salt,Pepper
Cooking string
For the cuffing
750gr Bird livers cut in small pieces(you can use minced meat instead)
1 Onion chopped
50gr Pine Seeds
200gr Raisins Used black raisins
3-4Tbsp Olive Oil
2Tbsp Tomato Paste
2 cups Water
1/4 cup Soup Rice
to taste Salt,Pepper

The best recipe for Thanksgiving Roasted Turkey with stuffing! As you may know in Greece we don’t have Thanksgiving Day, but we usually eat turkey on Christmas day! The stuffing is amazing and it is so juicy and tender!

Clean and dry with paper towel your bird and start by preparing the stuffing.

In a small sauce pan add the olive oil and the onion.When it starts to sizzle add the bird livers or the minced meat.Let it cook for a few minutes and then add the pines,the raisins, the tomato paste and the water.Season with salt and pepper.Give it a good stir and add the rice.Let it at medium heat for about 15-20 minutes until the rice is cooked.

In the softened butter add salt and pepper. Take the turkey and and lift the skin and put butter between the skin and the meat. This will give extra moisture and flavour.Massage it so that the butter will cover as much surface as you can.Try not to rip off th skin.Add if you want extra salt, pepper and oregano or rosemary.

Meanwhile prepare your potatoes.Cut them in large pieces and place them in a baking dish.Add olive oil, salt,pepper and oregano or rosemary.Mix them well.

On top of the potatoes add the turkey and with a spoon add as much stuffing as you can inside its belly.The rest of it, place in into aluminium foil ,close it very well, and put it into the baking dish too.
Tie the turkey's legs with cooking string so that you keep the stuffing inside the belly and won't come out.

Add some water at the bottom of your baking dish and cook it at 200 degrees Celsius. The cooking time depends on the weight of the turkey. It needs 35-45 minutes per kilo of weight. Every half an hour with a spoon pour the juices on top of the turkey to prevent it from drying out and to get extra flavour.Let it rest half an hour before serving. Enjoy!
