Ingredients

500gr Minced meat prefer beef
1 Onion diced
2 Tbsp Fresh Parsley finely chopped
1 Tbsp Fresh Dill finely chopped
4 Tbsp Carolina rice
2-3 cups Water warm
5-6 Tbsp Olive Oil
for the egg lemon sause
2 Eggs
2 Lemons juice

Youvarlakia is the one of the easiest and comfort food for winter!

It is a traditional Greek meatball soup in egg-lemon sauce recipe called aygolemono.

In a bowl place the minced meat, the onion, the parsley, the dill, the rice,the salt and pepper and a little bit of olive oil.Mix them all together.

In a pot add the remaining olive oil to cover the bottom.Take small amount of the mixture and create small balls until you have use it all.

Turn your stove on high heat.Add water just to almost cover them.Cook it for 10-12 minutes(if you don't have a pressure cooker it takes about half an hour or so).

When youvarlakia are cooked let them cool for a little while.Take the warm broath and add the 2 egg yolks and 1 egg white plus the juice of the 2 lemons and whisk them all together.

Pour the aygolemono(or egg lemon sauce)on top of youvarlakia and put on the stove again on medium high heat for ten minutes so that the sauce gets thick!Serve it with fresh bread!
